Pancit Bihon is a traditional Filipino dish that resembles stir-fried vermicelli or rice stick noodles, which Filipinos refer to as bihon. The dish is typically mixed with a variety of vegetables, meat, or seafood. I personally enjoy pairing it with Lumpia and Lechon Kawali. Pancit Bihon is usually served on special occasions such as birthdays, fiestas, and holidays.

How to Cook Pancit Bihon
Recipe:
Ingredients
1 lb of Bihon/ Vermicelli Noodles
2-3 cups water
2 tbs cooking oil
1/2 cup minced garlic
1 large onion
1 lb pork cut in thin slices (I preferred with a mix of fat )
1 lb chicken cut in slices (make sure to remove the bones)
1/4 lb snow peas
1/4 cup bell pepper
1 cup carrots, thinly slice
1/2 cabbage (chooped)
2 diced green onions
5 calamansi or 1 lemon ( optional)
Seasoning guide only you can season your pancit according to your own liking
1 teaspoon salt (optional)
a splash of Oyster sauce
1/2 teaspoon worcestershire sauce
1/4 cup soy sauce
1/2 teaspoon Black pepper
Instructions:
- Cook the vermicelli (Bihon) in boiling water for just a few minutes, or according to the package instructions. Drain and rinse with cold water, then set aside.
- In a large wok or pan, heat 1 teaspoon of oil. Sauté the pork until the fat renders, then remove any excess oil. Add the garlic and onion, followed by the chicken. Let it cook for 5 minutes.
- Add soy sauce, a splash of oyster sauce, Worcestershire sauce, black pepper, and salt to taste. Cover the pan and let it cook for another 5 minutes.
- Add the bell pepper, carrots, snow peas, and cabbage. Pour in 1/4 cup of water and simmer for another 5 to 10 minutes.
- Add the cooked vermicelli noodles and mix well. You can also add more oyster sauce and soy sauce to taste. Simmer for an additional 2 to 5 minutes.
Serve hot and enjoy with a squeeze of lemon.
